1/2 pkg tofu (silken preferred)
1 tbs dijon mustard (opt 2 tbs depending on your tastes)
1 tsp lemon juice
4 cloves roasted garlic
opt: dash cumin
opt: dash hotsauce, cayenne pepper, etc.
Put all ingredients into a blender or food processor. Blend until smooth.
Should keep for about a week.
If using mere mortal garlic, 2-3 cloves should be sufficient. Roasted garlic
has a milder flavor and is much creamier.
For what it's worth, I'm a big garlic fan. Correspondingly, I use the whole
head of roasted garlic.
