Spinach Artichoke Dip (low cal!)

10oz frozen spinach
1 can artichoke hearts (10-12 hearts per can)
8oz light cream cheese (or tofu cream cheese!)
8oz sour cream
1 cup grated parmesan cheese
2 tbsp ground mustard
generous amount of ground black pepper (or peppercorn medley grinder!)
4 cloves garlic
pinch cumin
opt: cayenne pepper or hotsauce

Preheat oven to 350F.

Put all ingredients except mozzarella cheese into food processor and blend
until smooth.    Pour mixture into 8x8 pan, cover with mozzarella cheese,
pinch of oregano, and a pinch of basil.    Bake at 350F for 30 minutes.   
Remove from heat and stir gently so the mozzarella cheese is mixed in.    Serve
with tortilla chips or do-it-yourself pita chips:

DO IT YOURSELF PITA CHIPS

With oven preheated to 350F, lay pita bread flat on a cutting board.    Optionally
sprinkle with garlic and/or onion powder.    Slice up into wedges and place on
a baking sheet.    Bake for about 10 minutes.    Can optionally brush pita bread
with some olive oil before baking for crispier chips.
